Maple Chicken Legs

Whats Inside:
4 Chicken thigh and drumstick joints
2 dessert apples, cored, quartered
250g shallots, peeled,halved if large
625g parsnips quartered
6 bay leaves
2tbs olive oil
2tbs maple syrup
2tbs cider vinegar

Cook It:

  1. Slash the chicken 3-4 times
  2. Place in a roasting tin with the apples, shallots, parsnips and bay leaves
  3. Min the olive oil, maple syrup, and cider vinager and spoon over the chicken and vegetables
  4. Add 4tbs of water to tin
  5. Cook at 190 degrees oven for 45mins
  6. Baste the chicken and vegetables half way through
  7. Once cooked, serve with cococunt rice, and salad.

Note: I used 8 drumsticks, you will see, in the photo, as  I could only find the drumsticks on shopping night – worked just as well!
