Cinnamon Pancakes

hehe, naughty cinnamon pancakes, but they are nice!

Ingredients

1 cup self raising flour

1/4 cup caster sugar

1 tsp cinnamon

1 tsp brown sugar

2 eggs, lightly whisked

3/4 cup milk

to serve: fruit (yummy with bananas, strawberries, kiwi fruit, mango), ice cream and good quality Canadian maple syrup

Method

1. Sift the flour, caster sugar, and cinnamon together into a glass bowl.

2. Add the brown sugar, and mix all dry ingredients together.

3. Make a well in the middle, and pour in the eggs and milk.

4. Whisk slowly until smooth – probably about 2 mins. Yes, the lumps will dissolve.

5. Heat a non-stick frypan, low to medium heat (5 o’clock heat). Add a sliver of salted butter.

6. Pour in 1/4 cup of pancake mixture, and cook on one side until there are bubbles on the surface. Flip, and cook for about 1-2 mins on other side.

7. Repeat Steps 5 & 6 for remaining batter. Makes about 8 pancakes.

8. Serve with your favourite fruit, ice cream, and maple syrup. Enjoy!
