Tuna Bakes

What’s Inside …
oil for cooking – I suggest Rice Bran Oil
35g, tuna in brine – well drained (leave overnight), flaked
5 eggs, lightly beaten
1/2cup, Evaoorated Milk
1 small, red onion, finely chopped
1/2 cup, chopped chargrilled red capsicum, well drained
1/4 cap, chopped dill
2tsp, baby capers
6, cherry tomatoes, halved

Cook It …
1. Preheat your oven to 180C.
2. Spray 12 muffin pan with oil.
3.In a glass bowl, mix tuna, eggs, milk, onion, capsicum, dill and capers.
4. Add evenly into muffin pan – scooping using a 1/4 measuring cup, and try to get a similar amount of tuna mix, and egg liquid in each scoop
5. Bake for 25 mins until cooked.
6. Serve with cocunt rice, and salad.
